Can you give recipes for raw foods that you tried?
My philosophy is to make it simple and not deviate from the natural state as far as possible. So most of the recipes involve one or more of just peeling, soaking, sprouting, cutting, mixing, blending. I am against making juices or smoothies and prefer to eat fruits in their whole state. I do use blending as a process to enable me make chutneys and in very rare cases burphies.Item | Recipe | Comments |
---|---|---|
Hot agent | green chilly, red chilly, jalapeno, black pepper | Just definition. Not for eating directly |
Spice | Cumin, clove, mace, nutmeg, star anise, cardamom, ajwain, cinnamon, | Just definition. Not for eating directly |
Herb | Cilantro, Mint, Basil, Parsley, dil | Just definition. Not for eating directly |
Green Peel | tender peels of ridge gourd, bottle gourd, chayote, persian cucumber, snake gourd | Just definition. Not for eating directly |
Sprouts | green gram, sunflower seeds, Sesame seeds, bengal gram, lentils, whole masoor dal, peanuts | Soak the seeds in water overnight. Next day wash and drain water. Put the seeds in a wide mouthed container and cover with a wet towel. Keep in oven or dark place. Wait for 2-3 days for sprouts to come and store the sprouts in fridge |
Unpeeled Fruits | apricots, persimmons, guavas, pears, apples, kiwis, strawberries, grapes, berries, some mangoes, cherries, peaches, plums | The more tree ripened, the better. Preferably eat them whole biting into them. |
Peeled fruits | Bananas, Papayas, pineapples, pomegranates, melons, oranges, water melons, some mangoes, | Preferably peel and cut just before use. Avoid making smoothies/juice as fruits generate vitamins when cut. These vitamins have very short life. |
Sun dried fruits | Apricots, raisins, dates, mangoes, cherries | Ensure that the fruits are not sweetened, or dehydrated or freeze dried or sulphured |
Sun dried nuts | hazel nuts, cashew nuts, peanuts, almonds, brazil nuts, walnuts, pine nuts, sesame seeds | Ensure that the nuts are not roasted or salted. Cashews are strictly not raw. They are boiled as part of the harvesting process. |
Dried Fruit (or honey) and Nut | any dried fruit (or honey) + any dried nut | This makes a great dessert. They can either be eaten whole or blended together. If blended, they are similar in taste to Indian burphies |
Nut Chutney | grind "any nut + any spice + any hot agent + salt + lemon juice" | Nut chutney can be used as vegetable dips or as salad dressing |
Green Chutney | grind "any herb + any green peel + any hot agent + salt + lemon juice" | Green chutney can be used as vegetable dips or as salad dressing |
Veggie sticks | sweet potatoes or carrots or celery or green peas in pods or turnips or raddish or beet root or zucchini or cauliflower | Peel the skin and cut veggies into one/two inch and one cm wide sticks. Dip in chutney and eat. |
Green Salads | Chutney over tender coarsely cut "spinach or kale or dil or mustard leaf or any lettuce or cabbage" | Greens contain chlorophyll and play a major role in healing process. |
Veggie salads | Finely grated vegetables + finely grated hot agent + lemon juice + olive/coconut oil + salt marinate the salad for an hour before use | Use the same vegetable as used for veggie sticks |
Salsas | Finely cut (tomatoes or mangoes or pineapples + jalapenoes + onion) + salt + lemon juice. | |
Guacamole | Finely cut (tomatoes + jalapenoes + onion) + salt + lemon juice + fork-crushed avocados. | |
Kosambari | Any sprouts + grated persian cucumbers + fresh grated coconut + finely cut jalapenoes + lemon juice + salt. | This is one super food I recommend as I am in control of all stages of the growth of sprouts |
I plan to do a 10 day raw diet. Can you give a typical daily plan?
I want to experience freedom and not restriction. So I will avoid using restrictive words like diet, control e.t.c. Positive benefits of the raw food gets negated by the stress induced out of restrictive feeling. On the other hand, if I enjoy the process even if I am not 100% raw, the joy over-rides reduced benefits if any. If I feel like eating cooked food, I eat it after applying the 5 point corrections explained. For eg, dharwad peda with a piece of pear, payasam with grated apple, ice cream with fruits or vada with raw chutney or pullav with veggie salad/raitha. Over a period of time, the body will automatically start refusing foods that it does not relish and I will automatically start craving raw food. Before starting this journey, stock enough fruits (preferably those in season), raw nuts, sun dried fruits, edible vegetables and sprouts. At office have enough of the following handy - fruits outside the fridge (banana, apple and avocado atleast) - 2 types of chutneys in fridge - a little each of various dried nuts - a little each of dried fruits - cut veggie sticks in the fridgeFollowing table gives a typical day's plan. My body is my indicator and I identify my set of foods, by eating with awareness. Each person's individual plan may vary based on his/her body.
Period | significance | What to eat |
---|---|---|
4 am to 12 noon - elimination phase | body is trying to eliminate wastes after a whole night of healing | Any amount of ripe fruits and during each eating eat till the stomach feels full. Supplement with Kosambari if needed. |
12 noon to 8 pm - Digestion phase | The sunlight and physical activity helps in digestion |
Cooked food if at all, by applying correction techniques discussed. Vegetable sticks with chutney or salsa or guacamole and continue with dry fruits and nuts. |
8 pm to 4 am - healing phase | the body is at rest and can focus on healing, which is additionally aided by chlorophyll | Kosambari, veggie sticks, Green salads, Veggies salads. Home made curd may be used as dressing in the worst case, with correction factors. |
